Cumartesi günü ekşiliği ile her daim iştahımı açan patates salatasını yaptım. Patatesin varlığı mı, içindeki ekşiliğin bolluğu mudur bilemem iştahım olmamasına rağmen tüm porsiyonu saniyesinde bitirdim 🙂 Buyrun tarifim;
Since I had my PhD defence on 3rd of February, I couldn’t add new recipes for a long time. My family was here to support me. My mom was cooking, my father was taking care of garden and my husband was helping them. The only duty of mine was to get prepare myself for the defence and try to reduce the stress with the help of cosy home environment and supportive messages from my brother 🙂 After the defence, my family went back to Turkey and I try to get used to being alone. Like I mentioned before, cooking is a way of relaxing for me, especially when there is nothing to fix the problems. On Wednesday, there was a bomb attack in Ankara. A lot of innocent people died for nothing. On the other hand, some people try to destroy the beautiful forest in one of the village at Artvin (a city at the coast of the Black Sea) to build a mine. People are still resisting to stop this and leave the forest for its real owners which are animals. Dying of innocent people for nothing, not feeling safe for my family and friends, and everything goes in a wrong direction in Turkey… Those situations made me quite furious, sad and broken. I don’t want to go in details about those topics. The only thing I could do is to express my feelings. This Saturday, I made a potato salad which always appetize me with its sour taste. I can’t say whether it is because of my favourite vegetable potato or the sour taste of salad, I finish whole portion even I didn’t have my appetite 🙂 let’s have a look at the recipe;
- 500 gr patates,
- 2 adet yeşil sivri biber,
- 1 adet kırmızı soğan,
- 1 adet yeşil soğan,
- 10-15 adet çeri domates,
- 4 yaprak marul,
- 4-5 adet salatalık turşusu.
Sosu için:
- 1 avokado,
- 4 yemek k. limon suyu,
- 1 yemek k. zeytinyağı,
- 2 yemek k. balsemik veya elma sirkesi,
- 1 tatlı k. tuz,
- 1 tatlı k. karabiber,
- 2 tatlı k. kırmızı biber,
- 2 tatlı k. sumak.
Yapılışı:
- Patatesleri güzelce yıkayıp bir tecereye koyun. Üzerini geçecek kadar su ilave ettikten sonra orta ateşte 15-25 dakika haşlayın. Patatesin cinsine göre haşlama süresi farklı olacaktır.
- Patatesler pişip soğuduğu zaman kabuklarını soyup doğrayın. Biberleri, kırmızı ve yeşil soğanı, domatesleri, marulları ve salatalık turşularını doğrayın. Doğramış olduğunuz sebzeleri geniş bir salata kasesine alın.
- Kabuğunu soyup çekirdeğini ayırdığınız avokadoyu ve diğer sos malzemelerini mutfak robotunun içine yerleştirip 1-2 dakika karıştırın. Elde ettiğiniz sosu salata kasesindeki sebzeler ile harmanlayın. Keten tohumu, dereotu veya frenk soğanı ile süsleyip servis edebilirsiniz. Afiyet olsun 🙂
Ingredients (3-4 servings):
- 500 g potatoes,
- 2 green peppers,
- 1 red onion,
- 1 green onion,
- 10-15 cherry tomatoes,
- 4 leaves of lettuce,
- 4-5 pickles.
For the dressing:
- 1 avocado,
- 4 table sp. lemon juice,
- 1 table sp. olive oil,
- 2 table sp. balsamic or apple vinegar,
- 1 tea sp. salt,
- 1 tea sp. black pepper,
- 2 tea sp. red paprika flakes,
- 2 tea sp. sumac,
Directions:
- Wash the potatoes and put them in a pot. Cover them with water and boil with medium heat for 15-25 min. Cooking time depends on the type of potatoes.
- Once the potatoes are cooked and cooled down, peel them. Cut the potatoes, green peppers, red and green onions, cherry tomatoes and pickles. Put them in a large salad bowl.
- Peel the avocado and take the seed out. Put the avocado and all other dressing ingredients in a food processor. Mix them well for about 1-2 minutes. Mix the dressing with the vegetables in the salad bowl. You can garnish the salad with flax seeds, dill or chive. Bon Appetit 🙂
